When on the test drive with the tech who did the PDI on my car, he told me that Porsche limits the coolant temp that's displayed to 90 C (194 F). I've switched my display to F and it does stay pegged at 194 F once it's warmed up. It appears that US cars display a max of 200 F. Is that what other's are finding?
Tech told me that Porsche sets that limit so people wouldn't panic if their coolant temp rises above "normal". Personally, I'd prefer to know what the actual temperature is so I can make adjustments BEFORE it gets too hot. Otherwise, the temp gauge isn't much more than an idiot light that flashes when it's too late.
